Parsnip & Apple Soup
What better way to warm up than with a hearty bowl of homemade soup. And you needn’t spend hours in the kitchen. This wholesome recipe flavoured with seasonal tangy apples and sweet parsnips is ready in less than half hour. Made in our Soup Maker, it cooks at a low wattage, using less energy than your hob and saving on your bills – for almost no effort. Simply add the ingredients, let the Soup Maker do the work, then enjoy!

Ingredients
- 500g apples (about 3 large – Bramley recommended)
- 600g parsnips
- 2 cloves garlic
- 40g butter
- 1 tsp ground cumin
- 1 tsp salt & pepper
- 500ml vegetable stock
- Pumpkin seeds for serving
Method
- Peel and cut the apples and parsnips into small cubes.
- Add the apples, parsnips, garlic, spices, butter, and vegetable stock into the soup maker.
- Turn the soup maker on and select the ‘SOUP SMOOTH’ setting. Leave to cook for about 20-25 minutes until the soup until is smooth and velvety.
- Season to taste with salt and pepper.
- Serve with pumpkin seeds, chilli flakes and drizzle with olive oil.
Tips
- Making a batch? Allow to cool and then pack into sealed containers. You can keep your soup in the fridge for up to 3 days (perfect for lunches). Or, freeze for up to 3 months.
